Chocolate-Pecan Brown Sugar Meringues
Have leftover egg whites from that Crack Pie? That's exactly what prompted me to put together a couple of other recipes and make these meringues. They were sooo good!
Chocolate-Pecan Brown Sugar Meringues
Ingredients
-4 egg whites
-1/4 tsp salt
-1 cup packed brown sugar
-1 tbsp white vinegar
-1 cup mini chocolate chips
-1 cup chopped toasted pecans
Directions
Beat the egg whites with the salt until foamy. While beating, gradually add the brown sugar and then whip to stiff peaks. Beat in the vinegar and fold in the chips and nuts.
Drop by teaspoonfuls about 2 inches apart onto ungreased baking sheets and bake at 250 F for 25 minutes. Turn off the oven, leaving the meringues inside for another 20 minutes without opening the door. Then remove the meringues to wire racks to cool (they cool very quickly). Store in airtight containers.
Yield: About 4-5 dozen.
