Masala Chai
Something a little different: tea! I love this stuff; tastes just like the masala chai from the local Indian restaurant. Amounts and types of spices can be played with, depending on your preference (anise is a common ingredient, but I hate that stuff).
Masala Chai
Ingredients
-1 2/3 cups water
-1 piece fresh ginger (about 1 inch)
-6 whole coriander seeds
-1 stick cinnamon, broken in half
-2 to 3 cardamom pods, cracked
-4 whole cloves
-2 black peppercorns
-2 black tea bags, or 1/8 cup loose black tea
-1 1/4 cups whole milk (I combined about 1/4 cup of cream with skim milk)
-1/8 cup (2 tbsp) sugar
Directions
Press the cardamom pods until they crack. Bring the water, tea, and spices to a boil.
Boil for 3-5 minutes until the tea is black and has reduced to about 1 1/2 cups or so. Remove from heat; strain and add the sugar. Add the milk and return to medium heat, stirring until hot.
Serve and enjoy.
Yield: 2-3 servings.
