So this is a wheat-gluten-free cake that I've made a couple of times and which I'm pretty happy with when I need something that can't have wheat in it. Since it uses sticky rice flour, there's no need to add extras like xanthan gum that I tend to see in gluten-free recipes (which I don't bake regularly, so I don't want to buy too many extra ingredients).

The cake has a slightly chewy texture--good chewy, not bad chewy--and everyone who's tried it has enjoyed it. I find the sticky rice flour in the international aisle at FreshCo.

A nice, easy cake! Just fresh blueberries spread in the bottom of a pan, topped with a lemon-buttermilk cake batter. Everyone who tried this loved it.

Here's a healthier cake recipe that's also rich, moist, and delicious. I used vanilla yogurt, but unflavoured or some other matching flavour would be fine. It also came out perfectly with the butter replaced with applesauce. The original recipe (linked at the bottom) includes instructions for a balsamic cherry filling; I just used some leftover strawberry buttercream to frost the cake.

This was the first time I ever tasted a tres leches cake so while I have no others to compare it to, it was delicious. A good way to use up some leftover pumpkin puree!

I did change a couple things to the original recipe: adding ginger, nutmeg, and allspice in addition to the cinnamon, and reducing the amount of sugar called for. It was still pretty sweet!

These took a little while to make, but they were so good Soooo good. I'd recommend making small cakes (using a muffin tin or mini loaf pan), since the 9x5 loaf I made burned on the outside by the time it was done in the middle (thankfully, still salvageable--I just had to cut off the bottom and sides).

This cake was great! Super easy, came out well (I baked it on the barbecue, even), and delicious. The only problem I had was that mine didn't look too pretty--all the plums stuck in the pan when I turned the cake out, so I scraped them out and dumped them back on top...

Anyway, you could probably use other fruits besides plums, like peaches or nectarines. I used tart yellow plums and offset the sourness by drizzling some salted caramel sauce on the cake slices before serving. And ice cream. Gotta have ice cream.

This was an interesting recipe that involves folding the other ingredients into the whipped cream. The resulting batter looked a little strange, which had me worried, but it turned out delicious! I cut my loaf in half and filled it with some lemon curd from the fridge, frosted the top and sides with some blueberry buttercream we had in the freezer, and finished it off with some sliced strawberries. Delish. ♥

Chocolate, cinnamon, and coffee are so good together. This one's really nice with ice cream, too! However, I did have a problem where I cooled the cake for the suggested length of time yet the top half stuck in the pan. It still tasted good scraped out, but just as a heads-up.

A nice change after something heavy! I found it all went together wonderfully. The cake was light, the glaze was sweet, and it was overall pretty refreshing! I used strawberry for the glaze, because--hey, strawberry-rhubarb.

Just about the richest sweetest thing I've ever eaten. A tiny sliver is all you need, best coupled with ice cream! A recipe to make your own toffee is included, but I saved some time and just used store-bought toffee bits, which turned out just fine. Actually, I probably even used less than half of the frosting, but the rest would probably make great chocolate truffles (Yes, it is that rich!).

Let me say that the flavour of this cake is all orange. The olive oil makes it wonderfully moist, and it's simple and quick (cooking time not included).

I've also used this recipe to make a delicious lemon poppyseed cake by switching out the orange for lemon and adding 1/4 cup or so of poppy seeds.
